Organic Green Tea From Kasahara in Yame

About Kasahara

Kasahara is known as the birthplace of green tea in Yame. Over 600 years ago, a Zen monk named Eirin Shuzui returned to Japan after completing a pilgrimage to China. He brought back with him seeds he received from a Chinese monastery. He travelled all over Japan until he came across the mountains of Yame. The lush mountains and beautiful valley reminded him of his place of training in China. It is is here, in Kasahara, where Shuzui planted the first green tea seeds in Yame.The Zen monk shared his knowledge about growing and preparing green with the monks at Reiganji Temple and they began cultivating in the region.

Eventually, green tea seeds and growing techniques spread all over the Yame area. Tokushiba Organic Green Tea grows in the these mountains, just around the corner from the Reiganji Temple.

Kasahara’s climate is highly suitable for growing tea with high temperatures during the day that fall dramatically at night; a peculiar characteristic of the inland region. Our Yamecha fields are located on gently-sloping mountain faces where fog and mist are a common occurrence in the mornings and around the rivers of this region.

Organic Approach

We take pride in growing our tea without the use of any chemical pesticides or herbicides.

Tokushiba’s tea fields and Daikouen’s processing facility have Organic Certification from JAS (Japan Agricultural Standard).

Like in all agriculture, the soil plays an incredibly important roll. We have our own compost house and we work obsessively to make the best nutrient-packed fuel for our soil possible. We use only natural raw materials such as rice hull, mushroom compost, blessings from the sea (salt and minerals, fish and shell-based fertilizers) and blessings from the mountain (fallen leaves and plants that turn to mulch). We can see the heat coming out of our compost and we get excited to spread this delicious plant food in our beloved fields. Our teachers at Daikouen have been doing this for 50 years. To walk on a field “Soft enough to practice Judo on” is our goal.

Manufacturing Process

The Manufacturing Process Is Just As Important As The Quality Of The Tea Leaf Itself.

Tea Manufacturing Is A Delicate Process Which Requires A Great Deal Of Precision. Many Small Variables Can Have A Big Impact On The Final Result. These Days, It Is Very Common Daikouen Farms in Kasahara.

To achieve the highest level of quality and taste possible to to the complete, control over every factor of the process such as steaming time, temperature, rolling and drying.

The deep steaming process reduces astringency caused in a sweeter cup with big body, robust taste, and smoother mouthfeel. There is a tendency for larger scale tea operations to use a shorter steaming process as it favors the color and shape of the tea leaves rather than For Tokushiba, the quality of flavor far surpasses the importance of how the tea looks.) Our tea then goes through a rigorous sorting process to ensure the highest quality before it is packaged on location, in Kasahara.

Toshiharu Horiuchi
(Founder of Tokushiba)

After many years of traveling outside of Japan, Toshiharu Horiuchi returned to his grandmother's hometown of Kurogi. In 2016 he started working closely with Daikouen as their apprentice. Since then, Tokushiba has formed a partnership with Daikouen in an effort to continue and promote the traditions of organic green tea cultivation.

Tetsuo Oohashi

With over 50 years of experience in organic agriculture, Tetsuo Oohashi is Tokushiba's Master Teacher. He knows everything about the mountains of Kasahara. While his Son has taken over major roles in the business, Mr. Testuo still works hard every day and is dedicated to a lifetime of active service.

Always smiling and ready to share a cup of tea and some wisdom. Through organic agriculture and hard work he teaches us about what is important, not only as farmers but as humans; Harmony with nature.

Kotaro Oohashi

Kotaro Oohashi is a 3rd generation tea farmer. Jack AND Master of all trades: Kotaro Oohashi grew up in Kasahara. He is highly skilled and experienced in agriculture, forestry, carpentry, construction, mechanics, etc ... It is truly impressive how He knows Kasahara like the back of his hand.
